Savory Meatballs
Turns out meatballs are also a Mexican dish!
Ingredients
- 1 lb ground lean beef
- ½ lb ground lean pork
- ½ lb ground veal
- 1 cup cooked rice
- ¾ cup minced onion
- 2 cloves garlic, minced
- 2 tablespoons parsley, minced
- ½ dried rosemary, crumbled
- 1 egg
- salt and pepper to taste
- ½ teaspoon sage
- 2 teaspoon chili powder
For Sauce
- 1 ½ tablespoons olive oil
- 1 ½ tablespoons minced onion
- 2 cups tomato sauce
- 1 cup beef broth
- 1 tablespoon sugar
- salt and pepper to taste
Procedure
- Combine all ingredients for the meatballs, and mix well. Then shape the meat mixture into small balls
- For the sauce, heat oil in a heavy casserole, saute onion until light golden, add tomato sauce, broth, sugar, salt and pepper and bring to a simmer. Add the meatballs, cover and cook gently for about 45 minutes.
