A meal for two that scales well
Ingredients
- 400g Chicken Thighs, cut into bite sized pieces
- 125g Greek Yogurt
- 1 Onion Diced
- 200g Tomato Sauce
- 150g Heavy Whipping Cream
- ½ tablespoon Brown Sugar
- curry seasoning
Procedure
- Marinate chicken in yogurt and spices.
- Fry the chicken until browned and set aside.
- Fry onions until soft, add spices, add tomato paste. Simmer for 10 minutes, stirring occasionally until the sauce thickens and changes color.
- Stir the cream and sugar into the sauce.
- Add chicken back in the pan and cook for 10 minutes longer. Serve with rice.
