Cranberry Orange Scones

Ingredients

Scones

  • 2 ½ cups flour
  • 2 tablespoons sugar
  • 2 ½ teaspoons baking powder
  • ½ teaspoons baking soda
  • ½ teaspoons salt
  • zest of 1 orange (see below)
  • ½ cup cold butter, cubed
  • 1 cup fresh cranberries, chopped
  • 1 cup buttermilk
  • 1 egg, beaten

Glaze

  • 2 teaspoons orange zest
  • 1 cup powdered sugar
  • 2 tablespoons orange juice

Procedure

  1. Preheat oven to 425 °F. Line large baking sheet with parchment paper.
  2. Whisk together flour, sugar, baking powder, baking soda, salt and orange zest (remember to reserve 2 tablespoons)
  3. Cut in cold butter until crumbly.
  4. Stir in buttermilk until soft dough forms.
  5. Fold in cranberries, lightly flour your hands and press dough into a ball. Knead dough 6-8 times. Flatten into 10” round circle and cut into 8 pieces.
  6. Place wedges on baking sheet and brush with lightly beaten egg.
  7. Bake for 13-16 minutes. When done place on wire rack.
  8. Combine glaze and drizzle over scones.

Notes

Can make with scones lemon zest and blueberries instead.
