Baked Tacos

Ingredients

  • ½ lb ground pork
  • ½ lb ground beef
  • 4 tablespoons oil
  • ½ cup onion, chopped
  • 1 green pepper seeded and chopped
  • 1 clove garlic, minced
  • 2 anchovy fillets, mashed
  • 2 cups canned tomatoes, drained and chopped
  • 1 tablespoon raisins
  • ¼ teaspoon oregano
  • 1 teaspoon chili powder
  • pinch of cayenne pepper
  • ¾ cup beef broth
  • 12 tortillas
  • ¼ cup parmesan cheese
  • ¼ cup cheddar cheese, grated
  • salt and pepper to taste
  • toothpicks

Procedure

  1. Heat oil in a skillet, saute ground pork for a few minutes, stirring occasionally. Add beef and saute for a few minutes longer until lightly browned. Then add ¼ cup of the chopped onion, half of the chopped pepper, garlic and ¾ cup of the tomatoes. Blend well. Add anchovies, raisins, mix and simmer for 10 minutes.
  2. To make a sauce, combine the remaining onions, pepper and tomatoes with the oregano, chilli powder, cayenne pepper and beef broth. Cook over gentle heat for about half an hour until slightly reduced.
  3. Heat the tortillas to soften them. Put part of the mean mixture on each, roll them up and fasten them with toothpicks. Arrange on an oiled casserole dish, spoon the sauce over them and sprinkle with the combined grated cheeses. Season with salt and pepper and bake in 350 °F oven for about 20 minutes until the cheese browns.
